Place the potato wedges in a large bowl. Drizzle with olive oil and toss to coat evenly.

In a small bowl, whisk together the salt, garlic powder, and Italian seasoning. Sprinkle the potato wedges with shredded Parmesan cheese while tossing to coat evenly. Then, sprinkle the seasoning mixture over the potato wedges.

Place the potato wedges on the prepared baking sheet in a single layer with the skin side down. Bake for 25–35 minutes or until the potatoes are fork-tender and golden brown.

Sprinkle freshly chopped parsley or cilantro on top of the baked wedges. Serve with your choice of dipping sauce.
